Coconut Ice Cream Sammies

The idea of using a ‘Bobo Bar’ in an ice-cream sandwich came to us in what might be the biggest ‘duh-moment’ in all of history. How did we go so long without thinking of such a fantastic masterpiece? We may never know. Anyways, we’re making them now and we will probably never stop suggesting that people use our delicious, soft Bobo’s Bites in lieu of cookies. Fair warning, these ice-cream sandwiches are as adorable as they are delicious, so it can be hard to take that initial bite.

Cut Coconut Bobo’s Bite in half, put in the freezer, and remove after 2 hours. Scoop ice cream onto one of the Bite halves and place together. Enjoy!


Pro Tips from Bobo

Make sure to let your bite halves sit for at least 5 minutes at room temp. We used Nada Moo’s Vanilla Bean dairy-free ice cream for this recipe and it couldn’t be the more perfect fit. You can also use regular dairy ice-cream as well.
