White Chocolate Peanut Butter 'Cookies'

So many of our recipes are inspired by our moms. They bring us a sense of warmth and happiness, even when we’re miles away from home. *Cue sentimental background music* But really, this recipe is one of those. We took a favorite White Chocolate Peanut Butter Cookie recipe and substituted our Coconut Bites in lieu of Ritz Crackers. They’re not only chewy and delicious, but are guaranteed to brighten your day with memories of mom. Try them, you won’t regret it (we swear!).

Cut every Bobo’s Bite in half, covering one side with creamy peanut butter. Place the two halves together. Turn a medium saucepan on low and add the coconut oil. After the oil melts, add in the white chocolate chips. Stir accordingly until all of the white chocolate is melted. Take a pair of tongs and dip one of the ‘bite cookies’ into the melted white chocolate. Cover the bite in white chocolate using a spatula or by turning the bite with the tongs. Using the tongs, take the bite out and place it on parchment paper to dry. Repeat until all of the bites are covered in white chocolate.
